cover potatoes (scrubbed, but unpeeled) and cook until soft in water to cover (about 30 minutes after it comes to a boil). Drain the potatoes, but keep the water. Melt 2 tbls butter in soup pot, add chopped onion and cook slowly until soft and sweet (about 10 minutes) add caraway seed and cook one more minute. Add coarsely chopped cabbage and cook slowly until soft and sweet (may need to add some of the potato water) When totally soft, puree with potatoes, potato water and milk (I used immersion blender). In the meantime, saute the finely chopped cabbage in the remaining 2 tbls butter until limp. Add to the pureed soup, along with salt, pepper and cider vinegar. Cook about 10-15 more minutes to blend flavors.
