Tofu Scramble

Ingredients
1/2 teaspoon olive oil 1/2 onion, chopped 2 garlic cloves, chopped1 tablespoon curry powder 1 teaspoon turmeric1/2 teaspoon black pepper1 tablespoon low-sodium soy sauce 1 block firm tofu, drained (16 ounces)1/4 cup nutritional yeastVarious fillings: Add at the end...2 cups fresh spinach handful chopped basil, parsley or cilantro Add after cooking the onions... 1 cup sliced mushrooms 1 bell pepper, chopped1 cup halved grape tomatoes1 cup asparagus1 cup broccoli 1/4 cup sun-dried tomatoes packed in water 1 cup wilted, chopped kale
Directions
Heat the olive oil in a large skillet, then add the onion. Saute over medium-high heat for about three minutes, until the onion is soft. Add the garlic, then a minute or so later, add the spices and soy sauce, stirring well.
Add the tofu, breaking it into bite-size chunks with your hands.
Saute, stirring often, for about 10 minutes, until the tofu is starting to brown in places. Sprinkle on the nutritional yeast and stir well to combine.

Serve hot.

Serving Size: Makes four servings, about 1/2 cup each (excluding any additional vegetables)
