Not Your Mother's Chicken Noodle Soup

Ingredients
1.5gal. water3 boneless, skinless chicken breasts4c. (dry) whole wheat rotini3c. (dry) black beansChicken seasoning (I use Marcel)2 cans diced, stewed or whole tomatoes.1 can peas1 can carrots1 can corn1.5c. chopped red onionBlack pepper (to taste)
Directions
Bring water, seasonings, pepper and onion to hard boil. Add whole chicken breasts and black beans. Cook until chicken is done, beans are tender, and stock is reduced by a third. Remove and shred chicken, then add. Add canned vegetables and pasta. Cook until pasta is tender.
