Jack's Lamb Curry

Ingredients
1 tbsp olive oil550 grams Lamb, Cubed1 medium Onions 3 Garlic cloves, crushed 2 tsp Ginger, cut into fine strips 20 gram(s) red chilli 2 Plums, quarted1 medium Carrots 1 can Canned Tomatoes 1 tsp ground coriander1 tsp ground cardamon 1 tsp ground cumin1 tsp tumeric1 tsp all spice1/4 tsp cayene pepper1/8 tsp chilli powder1 beef oxo cube, crushed 4 cup Sweet potato cubes
Directions
heat oil in a saucepan, add ginger, garlic, chilli and onion, cook stirring for a few minutes. Add the spices cook another minute or so until nice and fragrant.
Add the meat and stir until browned all over, cook for 5 minutes, then add carrot, plums and tomatoes. Crush oxo cube and stir through, lower heat to simmer and cook for 90 minutes, stirring occasionally, then add in the sweet potato and stir through, cook a further 30 minutes.
