Asian Orzo Pasta Salad with Teriyaki Tofu

Dressing: 1/2 C. Canola oil 2 Tbsp. Soy Sauce3 Tbsp. Rice Vinegar2 Tbsp. Hoisin Sauce (this is key for the right flavor!)2 Tsp. Brown SugarSalad: 1 1lb box Orzo2 C. Red Bell Pepper, diced1 C. Scallions, diced1 small can (about 1 C) sliced waterchestnuts1 medium can (about 1.5 C) mandarin oranges1.5 C. sugar snap peas, diced2 C. Teriyaki marinated extra-firm tofu
Cook pasta according to package directions. While pasta cooks, sautee teriyaki marinated tofu in a skillet or wok. Mix canola oil, soy sauce, vinegar, brown sugar and hoisin sauce to make dressing. Chop red pepper, scallions, and snap peas into bite-size pieces. Once pasta and tofu are done, toss together with veggies, mandarin oranges, and waterchestnuts. pour dressing over top and combine well. Serve chilled.
