Tamara's Cajun Turkey Soup

Ingredients
40 cups Turkey Broth (see my recipe for Homemade!)8 cups turkey breast, cooked and chopped4 cups carrot, chopped2 cups fresh mushrooms2 cups celery, chopped1 cup yellow onion, chopped1 cup corn (canned)1 cup black beans2 Tbsp Extra Virgin Olive Oil5 cloves garlic, minced1/4 cup cajun spice mix
Directions
In a shallow pan, saute onion and mushroom (and garlic, if desired) in olive oil until onions are slightly transparent, about 5 minutes.

Combine all ingredients into a large stock pot or crock pot, and simmer for 15-20 minutes until all ingredients are warm.
