Grandma’s From the Farm Potato Pancakes

5 medium potatoes5 tbsp flour¼ tsp slightly heaped of salt¼ tsp baking powder1 ½ tbsp water
1) Peel and quarter the potatoes (if you have a food processor) or grate them by hand.
2) Place the potatoes in a bowl and add all remaining ingredients. Mix well.
3) Heat griddle to 400 degrees. When hot, grease then cook pancakes. Makes 4 large pancakes or about 10 small ones. If you don’t have a griddle, you can heat a large pan over medium-high heat and cook on each side until slightly browned (about 2-3 minutes per side).
Serve with ketchup, sour cream, salsa, etc.
Serving Size: 4-10, depending on the size of pancake you make.
