Tofu with Spinach and Chickpeas

Ingredients
Olive oil cooking spray15oz block Trader Joe's extra firm tofu, pressed and drained, and cut into bite sized pieces1 can of chick peas6 cups of spinach1.5 C chopped onion4 t chopped garlic1/4 C vegetable broth1/2 T ground cuminsalt, pepper, and any other spices you would like. I've tried ginger, coriander, and ground mustard before with good results :)
Directions
Spray skillet with olive oil cooking spray
Saute tofu pieces until golden brown, then transfer to a plate to keep warm
Cook garlic and onion until softened
Add spinach, tossing to mix ingredients and soften
Stir in tofu, chick peas, spices, and vegetable broth
Cook until broth has reduced and ingredients are heated through.
