Stuffed Acorn Squash with Quinoa and Apple

Ingredients
1 Medium Acorn Squash, washed, cut in half and seeded1 cup cooked quinoa (see directions on bag or box)1 medium onion, peeled and chopped small1 medium red pepper, washed and diced (equiv 1 cup)3 gloves garlic minced or chopped small1 granny smith apple or other type hard apple, washed cored and diced, (I leave peel on)1 tbsp raw sunflower seeds1/4 cup raisins1 tsp olive oilSalt & Pepper to taste
Directions
Pre heat oven to 375f, in a small casserole dish, pour 1" water in base, add the squash cut side down, pierce skin, cook in oven for 45 mins until tender.
Meanwhile cook the quinoa according to the directions on the bag or box (1/2 cup uncooked quinoa = 1 cup cooked quinoa). Let cool.In a pan, heat the olive oil,gently sautee` the onion, garlic, and pepper until soft add the quinoa, apple and raisins, season with a little salt and pepper, add water or a little vegetable broth, when squash is tender, carefully take out of baking dish, stuff with quinoa mixture, top with sunflower seeds. Pop back in oven for 15mins, or until heated through.
Serve hot

    I left out the raisins and toasted the squash seeds in the oven with a little olive oil and sea salt in lieu of sunflower seeds. Very tasty. - 10/20/12
