George Stella's Cauliflower Mac and Cheese Casserole

SaltWaterVegetable spray1 large head cauliflower3/4 cup cream2 oz cream cheese1.5 tsp dijon mustard1/4 Colman's dry mustard1.5 cup shredded sharp Cheddar cheese.25 tsp pepper1 cup shredded sharp Cheddar cheese
Cut cauliflower into small florets. Bring pot of water to a boil, salt the water. Add cauliflower and cook for 5 minutes. Drain in colander. Use a large heavy bowl to press water out of cauliflower. Spray casserole pan with vegetable spray. In a small saucepan bring cream to a simmer, add cream cheese stirring until cream cheese melts. Add dijon mustard and mustard powder, stir well to incorporate. Add shredded cheddar cheese slowly, stirring to incorporate. Put cauliflower into prepared casserole dish, pour cheese sauce over. Sprinkle the last cup of cheese over the top. Bake in a 375 degree oven until topping is melted and beginning to brown. Remove from oven and let sit for 5 minutes. Serves 4 to 8 people.
