1 whole chicken1 med. onion (rough chop)1 1/2 tbsp. curry powderjuice of one lemon8 oz can tomato sauce1/4 cup parsley (rough chop)1/2 sweet bell pepper15 oz can green beans15 oz can kidney beans1 cup dry white rice1 small bag peas and carrots (frozen)
Cover whole chicken with water in pot. Add parsley, onion, lemon juice, curry, tomato sauce and roughly chopped bell pepper to pot. Bring to a boil, keeping at a slow boil for the first hour. Be sure to maintain water level for soup base. Pull chicken from bone, or chop cooked chicken. Add remainig ingredients,cover and cook for one hour or until rice is tender. Salt and pepper to taste.
