Chocolate Cherry Cake

15 ounce can of black beans1/4 cup applesauce4 eggs2 tablespoons strong coffee2 cups defrosted dark cherries- no pits1 tub light whipped topping1 cup chocolate chips3 tablespoons Wax Orchards chocolate topping4 tablespoons cocoa1 teaspoon baking soda1/2 teaspoon baking powderdash of saltone teaspoon vanilla
In blender blend beans, eggs, applesauce, sugar, 1 cup cherries, coffee, cocoa, baking powder, baking soda, salt, and vanilla. Blend until smooth. Stir in Chocolate chips. Spray non-fat cooking spray on bottom of round cake pan. Pour in batter and bake at 375 for 40 minutes or until toothpick comes out clean.
Mix whipped topping with Wax Orchards chocolate topping. Stir in 1 cup of cherries. Refrigerate until ready to use.
When cake is done and cooled use a piece of sewing thread to circle the cake, pull thread through cake making two pieces. Fill the cake with half of chocolate whipped spread. Then use rest of whipped spread on top of cake. Makes 8 pieces.
