Chicken Sundried Tomato Pinwheel

2 wedges Laughing Cow light swiss cheese2 tbsp sundried tomatoes, drained and chopped2 tsp Penzeys Tuscan Sunset8 oz boneless skinless chicken breasts, 1/4" thick
Preheat oven to 350'F.
Combine cheese, spice, and tomatoes in a bowl. Spread over chicken.
Tightly roll up chicken and secure with toothpicks. Place in non-stick sprayed pan and cover with foil.
Bake for 20 minutes. Bake uncovered for 15 minutes more.
