3 T. olive oil1 onion, chopped2 cloves garlic, chopped1 14.5 oz. diced tomatoes1 15 oz. can tomato sauce8 c. chopped fresh kale or other greens1 1/2 lb 7% fat ground beef,(buy good quality)6 c. cooked pinto beans4 c.water from cooking the beans, (or use canned beans and any type of stock or broth)small pinch oreganosalt and pepper to taste
In a skillet, cook ground beef and rinse in a colandar under hot running water. Set aside. in a large pot, measure olive oil and cook chopped onion over medium heat until it is soft and translucent. Add copped garlic at th end and watch that it doesnt burn. When garlic is done, add tomatoes and tomato sauce and greens. Cover and cook for 5-10 mins, (depending on type of greens). Add cooked hamgurger, the beans and broth or the bean liquid and season to taste. Simmer a bit. Even better the next day!
