Ingredients
2 1/2 tbsp fresh lime juice (48g)1 tbsp fish sauce (16g)1 tbsp sugar (14)g1 red chile pepper chopped (3g)2 clove garlic, minced (12g)4 cucumbers peeled, seeded, cut in half & thinly sliced (439g)1 tsp dried mint (1g)10 roasted peanuts, coarsly chopped (7g)
Directions
Serves 2 (about 269 grams each)

Whisk first five ingredients in a bowl. Add in the cucumbers and mint; stir to coat. When serving, srpinkle with chopped peanuts.
