Introduction

I just made this up, a simple meal inspired by lots of thai soups I have eaten! I just made this up, a simple meal inspired by lots of thai soups I have eaten!

Ingredients

    Coconut Milk, regular- 1 14 oz can
    Chicken Broth (Nutritional info assumes salt free, homemade bone broth)
    SAN J Organic Tamari Wheat Free Soy Sauce, 2 tbsp
    Sambal OelekGround Chili Paste, 1 tsp
    Chicken Breast, cooked, 2 breasts, chopped (nutritional info for 228 grams)
    Shrimp, cooked, peeled, and chopped into two or three pieces - 10-12 medium ( 67 grams)

    Steeping in the soup-
    Basil, 10 leaves, preferably on the stem, tied in a bundle to steep
    Lemongrass, fresh, large pieces

Directions

In a large soup pot, bring to a soft simmer the coconut milk, broth, and seasoning.

Add large cut pieces of fresh lemongrass and the garlic bundle

After it's simmered for 10 minutes, add the chopped meats and let simmer a few more to warm.

Before serving, remove lemongrass and basil.

Serve over your choice of noodles, garnish with cilantro, more chili paste, lime, whatever. Let this be a start!

    I used all shrimp,and added tofu - no chicken. It was a little bland for me - didn't have chili paste so used a little tabasco sauce to give it a kick, powdered ginger, a little corriander and miso. Also scallions... YUM - 2/19/11
