Low Sugar Brown Rice Pudding

Ingredients
3/4 cup cooked brown rice1 cup unsweetened vanilla almond milk3/4 t sun crystals1/2 t cinnamon1/2 t vanilla1 T liquid egg substitutepinch of salt
Directions
Place rice, 3/4 c milk, salt, and sugar in a small saucepan. Simmer for about 15 minutes, stirring occasionally. Add cinnamon, vanilla, egg substitute, and remaining 1/4 c milk. Simmer for 1-2 minutes. Let cool & chill.
