Sour Cream Fudge Cookies

Ingredients
12 1/2 oz bread flour2 tsp baking powder2 tsp baking soda1 tsp salt5 oz cocoa powder6 oz chocolate, unsweetened1 lb 2 oz chocolate, semi sweet6 oz butter, unsalted11 oz sugar, granulated11 oz sugar, brown8 oz eggs, large8 fl oz sour cream2 tsp vanilla1 lb 2 oz chocolate chips
Directions
1. Sift together dry ingredients. Set aside.
2. Melt the chocolates in a double boiler. Cool and set aside. Do not add the chocolate chips.
3. Cream together the butter and the sugars for about two minutes or until the mixture lightens.
4. Add eggs in stages. Scrape bowl.
5. Add melted chocolate and blend well. Scrape bowl.
6. Add sour cream and vanilla and blend in. Scrape bowl.
7. Add the dry ingredients.
8. Fold in the chocolate chips.
9. Portion with pastry scoop and flatten slightly with a moistened hand.
10. Bake at 325 for 10-12 minutes.
