Black Bean Patties

Ingredients
4 teaspoons olive oil, divided1/2 cup chopped onion1/2 cup chopped mushrooms1 Tablespoon oregano1 Tablespoon basil1 Tablespoon minced garlicFreshly ground pepper to taste2 cups drained and rinsed black beans, well drained1 cup cooked brown, whole grain rice
Directions
In small skillet, heat 2 tsp oil. Add chopped onions, mushrooms, garlic and seasonings. Saute until onions are tender. In large mixing bowl, pour beans and rice. Add ingredients in skillet. Mash with potato masher until well blended. Smooth out in bottom of bowl and cut in 4 equal portions. Heat lightly oiled griddle on medium heat. Pour about 1/2 tsp oil into hand and coat both hands. Form 1/4 of bean mixture into pattie coating evenly with oil. Repeat with other 3 portions. Place on hot griddle and brown - 5 to 7 minutes per side. Serve with a Daniel Fast Friendly Chutney or sauce like my gingered pineapple cranberry chutney.
