Gently Stewed Beets

2 lbs beets3 tablespoons oil (you don't need this much)1 teaspoon cumin seeds1 bay leaf1 cup canned chopped tomatoes 1 teaspoon ground cumin1 teaspoon ground coriander1/4 teaspoon ground tumeric1/4 teaspoon cayenne pepper1/4 teaspoon salt 1 1/2 cups water
Peel beets and cut into 1 inch chunks. Put oil in wide, medium sized pan and set over high heat. When oil is hot put in cumin seeds and bay leaf. When leaf darkens slightly (only takes seconds) put in tomatoes, ground cumin, coriander, tumeric, cayenne, beets, salt and water. Stir and bring to boil. Cover, turn heat to low and simmer for 30-40 minutes or until beets are tender.
