Jan's Baked Potato Soup (Serving Size 1 cup)

Ingredients
Butter, unsalted, 1 tbspOnions, raw, 2 cup, chopped*Flour, white, .25 cupSwanson Chicken Broth 99% Fat Free, 3 cupCream of Chicken Soup, 1 can (10.75 oz)Mashed Potatoes, dehydrated, 1 cupMilk, 1%, 1.25 cupSalt, .25 tspBasil, .50 tspTabasco Sauce, .25 tsp*Potato, raw, .50 cup diced*Hormel Bacon Bits, 2 tbspCottage Cheese, 1% Milkfat, 3 ozScallions, raw, 2 tbsp chopped
Directions
In large dutch oven over low heat, melt butter, saute onion, stirring constantly until tender. Add flour, stirring well. Gradually whisk in broth and soup; bring to a boil. Add instant potato flakes; cook according to directions on package; reduce heat to simmer and add milk and cook for 10 minutes. DO NOT BOIL!!!! Add diced potatoes, seasoned salt, basil and tabasco. Ladle into bowls and sprinkle with bacon, cheese and green onions.
