Curried Chicken

1 lb. of boneless, skinless chicken breasts, cubed (larger cubes)1 cup of sliced onlons1 cup of sliced red peppers1/4 cup of crushed garlic1 cup of sliced fresh mushrooms1 cup of fresh string beans, halved1 cup of sliced black olives2 tbsp. extra virgin olive oil3 tbsp. curry powder (spicy not sweet)2 tbsp. of dried cilantro1/2 tsp. of cayenne pepper (to taste)1/2 tsp. of sea salt (to taste)ground black pepper to taste
In a wok or a large frying pan, sautee onions, garlic, and string beans together for two to three minutes. Add peppers and cook another minute or so. Add mushrooms and cook until slightly tender. Put all veggies aside in separate bowl.
Add chicken to pan, and season with salt, pepper, and brown. While browning, add 1 tbsp. of curry powder.
When chicken is cooked through, add veggies back to pot, and add olives. Add remaining curry, cilantro and cook together for another few minutes, until all ingredients are tender.
Serve over brown rice.
