Ingredients

    1/2 Tbsp olive oil
    1 clove garlic
    1/3 cup onion, chopped
    4 oz boneless skinless chicken breast, diced
    2 tsp all-purpose flour
    1/2 cup low sodium chicken broth
    2 Tbsp curry powder
    1/2 tsp black pepper
    1/2 cup instant brown rice
    1 tsp ground cumin
    1/2 cup green bell pepper, chopped
    10 baby carrots, thinly sliced
    1 Tbsp margarine

Directions

Heat olive oil in medium skillet over medium-high heat. Add garlic and onion and saute until golden, about 2 minutes. Add diced chicken and cook until lightly browned, about 5 minutes. Add flour and stir. Add chicken broth and stir to combine. Add curry powder and pepper. Reduce heat to medium-low, cover and simmer for about 10 minutes, or until chicken is cooked through. Stir occasionally. While chicken is cooking, prepare rice according to package directions, adding cumin to the water. In a separate skillet, melt the margarine and saute the green peppers and carrots until soft. To serve, arrange rice on a plate and top with chicken mixture and green pepper/carrot mixture.

    I ditched the chicken broth and added some hot pepper flakes. At least it had no raisins. - 4/16/07

    Simple to make and a great change to the same old same old. Might add some non-fat yogurt next time. - 4/10/07
