Peanut Soup

Ingredients
1 T coconut oil3 ribs celery1/2 a medium onion2 quarts chicken broth1 1/4 cup natural peanut butter1/2 tsp. salt2 cups whole milk1/8 cup roasted peanuts, chopped
Directions
Saute celery & onion in coconut oil. Stir in the broth, peanut butter, and salt. Simmer, covered, on stove for 1 hour or in crock-pot for 2-3 hours on high. Stir in milk, and cook for 15 minutes more. Garnish with chopped peanuts.

Serving Size: Makes 8 servings (about a cup each)
