Black Bean Soup (adapted from Happy Herbivore)

15 oz can low sodium black beans (drained and rinsed)1/2 medium cooking onion, chopped1 tsp ground cumin1 1/2 tsp chili powder1 1/2 c water1/4 c salsa1 oz lime juicecilantro to garnish (if desired)hot sauce (if desired)
Chop onion and saute in a thin layer of water. Once translucent, add cumin and chili powder, stir to combine, then add rinsed beans, water, and salsa. Bring to a boil, then reduce to a simmer for 10 minutes, stirring occasionally.
Remove from heat and stir in lime juice. Transfer about half of the soup to a blender and puree until smooth. Add the pureed soup back into the pot and stir to combine. Serve with crisped tortillas (nutrition not included), cilantro, and add hot sauce if desired.
