Curried Broccoli with Chick Peas

Ingredients
Garlic, 3 clove Ginger Root, 1 TblChipotle Chili Powder, 1 tsp Sun Dried Tomatoes, 0.5 cupCherry Tomatoes,10 Broccoli, fresh, 2 cup, chopped Spinach, fresh, 3 ozCurry powder, 1 tbsp *Cumin (ground), 1 tsp *Pepper, white, 0.5 tspSalt, 0.5 tspTurmeric, ground, 0.25 tspVegetable Broth, 2 cup Chick Peas, 15 oz canuncooked Brown Rice, long grain, 0.5 cup
Directions
- Spray a large saucepan with oil and heat over medium heat.
- Add garlic, ginger, and chipotle powder and cook for about 3 minutes
-Add the tomoatoes, and cook another 3-4 minutes, stirring occasionally;
- Add curry powder, cumin, pepper, salt and turmeric, and mix in;
- add Broccoli, spinach, broth and chick peas, and stir;
- bring mixture to a boil; add rice; lower heat and cover; cook for about 30-40 minutes, or until rice is done.

Serving Size: Makes 4 servings of slightly less than a cup each
