General Purpose Curry Powder

2 tbsp urad dal (split black bean)2 tbsp chana dal (split garbanzo bean)1 tbsp fenugreek/methi seeds1 tbsp cumin seeds1 tbsp coriander seeds2 tbsp paprika, ground30 whole black peppercorns1 1/2 tbsp mustard seeds2 tbsp turmeric, ground
Combine all whole spices in a dry skillet and heat on high until seeds turn dark and mustard pops (5 to 10 minutes).
Transfer to a dish to cool (seeds will continue to cook while still in pan).
After seeds cool, place 2 tbsp into a spice grinder or a coffee grinder (see tip). Grind until powdered. Continue grinding until all seeds are ground. Add powdered spices. Mix well. Seal in an airtight container.
Serving Size: makes 12 1/8 cup servings
