Ingredients
1 TBS coconut oil1/2 TBS butter4 large eggs1/2 medium onion, diced1/2 red pepper, diced1/2 summer squash, diced1/2 zucchini, diced2 small red potatoes, diced3.5 oz shredded mozzarella cheese4oz shredded pork (or any leftover meat)spices to taste
Directions
add fats to skillet. Once melted, saute veggies until tender (I used leftover roasted red potatoes, so they were already cooked). Add in meat and spices. Warming through before wisking in eggs.
