Plain white flour (UK), 325 g (remove)Baking Soda, 2 tsp (remove)Granulated Sugar, 125 grams (remove)Cinnamon, ground, 2 tsp (remove)Ginger, ground, 1 tsp (remove)Carrots, raw, 350 grams (remove)*Pineapple, canned, 1 cup, crushed, sliced, or chunks (remove)Prunes, dried, 15 prune (remove)*Light Soft Brown Sugar, 235 gram(s) (remove)*Golden Syrup, 8 tsp (remove)*Egg whites (1/4 cup = 2 egg whites), 2 serving (remove)*cream of tarter, 1 tsp (remove)
reheat oven to 170 degrees, grease ans coat tin with flour,
mix all dry ingredients in 1 bowl (only add 1/2 white sugar at this stage, then all wet ingredients in another bowl (not egg whites)
mix dry into the wet.
whisk egg whites adding remaining white sugar, and fold into the mix.
pour into tin and bake for 1 hour, cover with foil/greaseproof paper and bake for another 20 minutes, or until skewer comes out clean, cool in tin then turn out and enjoy x
