Introduction

These are light, fluffy and only about 50 calories each! These are light, fluffy and only about 50 calories each!
Number of Servings: 20

Ingredients

    1-1/2 cups sweetened shredded coconut
    2 egg whites
    1/4 tsp vanilla extract
    Dash of salt
    2/3 cup granulated sugar


Directions

Beat egg whites and dash of salt until soft peaks form. Gradually add in sugar while beating until peaks are stiff and glossy.
Fold in coconut.
Drop by rounded teaspoon onto greased baking sheet.
Bake at 325*F 18-20 minutes until set and very slightly browned.
Center will still be soft.

    These are easy and delicious! I substituted no calorie sugar (Erythritol) instead of the real thing. I got 21 nice size cookies @ 26 calories each. I did chill the bowl and beaters plus turned the oven off when cookies were browned and left them in for a couple of hours. - 12/22/08

    This is a great treat! I have made them a little different by sprinkling dry (flavored, sugar-free) gelatin powder on top of them before putting into the oven. Rasperberry gelatin has been favorite at our house - - 6/16/09

    These are great. I followed the recipe except I baked them for 15 minutes then turned the oven off and let them sit for 2-3 minutes. Also, make sure you grease the pan well because they will stick. I can't wait for my friends to try them tonight. Thanks for sharing! - 4/10/09

    Awesome! For a chocolate fix, add 1 TBSP of cocoa powder (adds 1 calorie per cookie). Also, instead of regular coconut, I toasted it before adding to the mix. These are great. I agree about the cooking spray - get them off the tray quickly too. - 8/2/09
