Deedy's Oven Omlette with Veggies & Ham

Ingredients
1/2 cup sliced fresh mushrooms1 tbsp minced onion1/4 cup diced green pepper1/4 cup diced red pepper1/3 cup diced very lean ham5 large whole eggs2 tsp milk1/3 cup shredded cheddar cheese1/2 cup cherry tomatoes quartered (for top)2 tsp olive oil
Directions
Heat oven broiler to med- high. Heat non-stick 10" sautee pan med-hi, (must be oven proof pan) add 1tsp oilve oil. Add mushroom, ham, onion and cook just until barely soft. Add green and red peppers just to heat through. Remove to a bowl and set to the side. Wipe out pan and add remaining oil. Beat eggs with milk and a dash of salt & pepper, add to heated pan. Add sauteed veggies and ham. Top with cheese then tomatoes. Place under heated broiler until eggs set and cheese almost bubbles.
Divide into fouths and serve from pan.

This recipe can be modified and use egg substitue and low fat cheese. You can add other veggies and herbs to punch up flavor and texture. Experiment. I did.

I also thought the nutition numbers were not bad. Enjoy.
