Ingredients
*Chicken, Costco Kirkland Signature Rotisserie Chicken White Meat Skin Removed, 8 oz (remove)El Pollo Loco, 4.5 corn tortilla, 7 serving (remove)Onions, raw, .5 cup, chopped (remove)Garlic, .125 cup (remove)Olive Oil, Extra Virgin, 2 tbs (remove)Salt, .5 tbsp (remove)Pepper, black, .5 tbsp (remove)Oregano, ground, .5 tbsp (remove)*Onion powder, 1 tbsp (remove)Garlic powder, 1 tbsp (remove)Trader Joes Savory Broth Chicken Flavor, 2 serving (remove)*Salsa Verde, Trader Joe's, 12 tbsp (remove)*Silver Goat Garlic & Herb Goat Cheese, 5 oz (remove)*Cumin - Ground, McCormick (1 tbsp), .333 tbsp (remove)*Trader Joe's Simply Fat-Free Sour Cream, 12 tbsp (remove)Cheese, Lite Mexican Blend Shredded Trader Joe's 1oz=.25 cup, 4 oz (remove)
Directions
saute onions & garlic in evoo on medium heat, add shredded rotisserie chicken breast (no skin) & spices. Combine, and then add chicken packets & salsa verde. Mix well then add goat cheese & sour cream. Once combined & warm throughout remove from heat. Layer as follows in an 8x8 sq baking pan: small amount of sauce & chicken mixture to keep the bottom moist, 2 tortillas on bottom, 1/3 remaining chicken mixture, 1/3 shredded cheese, 2 more tortillas, 1/3 chix mix, 1/3 cheese, 3 tortillas, remaining chix mix & remaining cheese. Cook on 375 degrees for 30-40 minutes.
