indian pudding (lightstyle!)

4 c milk (2%)2/3 c molasses1/2 c yellow cornmeal2 eggs, lightly beatenginger, cinnamon, nutmeg to taste
preheat oven to 275, grease cooking pan, and bring pot of water to boil.
boil milk, and gradually add cornmeal. stir constantly and simmer until thick. remove from heat and add molasses. cool, and add eggs and spices.
pour into baking dish and put that in a larger pan, adding enough boiling water to be level with pudding.
bake for 2 hours, and let cool before serving. especially good with ice cream!
makes 8 servings. recipe adapted from my mom's. =)
