Asian Tofu Salad

Ingredients
1 Full Package House Foods Tofu Shirataki (Spaghetti) 1 oz. shredded carrots1.5 oz cubed tofu1 scallion2 TBSP frozen edamame, thawed1 tsp peanut butter1/4 tsp minced garlic1 packet no calorie sweetener1/4 cup silk coconut milk
Directions
Sauce:
Mix peanut butter and coconut milk well with a fork. Once completely incorporated mix in sweetener and garlic.

Salad:
The noodles smell funny but once prepared you can't even tell.
Prepare the noodles by draining and rinsing them thoroughly. Then pat them dry and put them in a bowl and microwave them for 1 minute. Drain and rinse them again and pat them dry again. At this point they shouldn't smell anymore.

Combine noodles with the carrots,edamame, tofu and scallion and pour sauce over the mixture. Refrigerate for at least 15 minutes but the longer the better.
