chicken and leek pot

Ingredients
2 chicken breasts skinned and boned yield from 1lb1tbs olive oil2 cups homemade chicken stock2 cups chopped washed leeks1 cup sliced or chopped fresh mushrooms200 grams quartered red potatoes1 tbs half and half cream
Directions
Slice chicken breasts length ways then slice each half in three. Total of twelve pieces. Heat large pan. Add olive oil.
After 30 seconds add chicken to pan and brown.add leeks to pan. Add mushrooms.
Lower heat and cook, stirring occasionally for 5 minutes. Pour in stock,add quartered potatoes, bring to boil, then reduce heat, cover pan and simmer until potatoes are soft and chicken is cooked.
Stir in cream, heat through, season and serve.
