10 oz. Spinach14 oz. Artichoke Hearts8 oz. Fat Free Cream Cheese8 oz. Fat Free Sour Cream1 Tbsp. I Can't Believe It's Not Butter1/4 cup Kraft Parmesean, Romano and Asiago Cheeses3/4 cup Part Skim Mozzarella Cheese4 Tbsp. Fiber Supplement Clear Mixing No Flavor Non-thickening2 Tsp. Garlic SaltSalt to tasteFresh Cracked Black Pepper to taste2 Tsp. Cayenne Pepper1/2 Chopped Onion
Prepare spinach as instructed on package (for frozen usually boil and drain). Chop artichoke hearts. Saute chopped onions in butter. Add spinach, onions, artichoke hearts, garlic salt and pepper to 1.5 quart casserole dish. Microwave for 3 minutes on high. Add cream cheese and sour cream to casserole dish, mix and microwave 3 minutes on high. Add Kraft cheese mixture and mozzarella cheese to casserole dish mixing well. Cover with foil and bake at 350 for 20 minutes. Remove from oven, add fiber supplement powder and mix well. Ready to serve as a party appetizer or seperate in 4 servings (as nutrition facts are calculated) and eat as a filling lunch. Yields about 48 oz. total so servings are calculated for approximately 12 oz. You could techinally split it up into smaller servings and eat as a side dish as well. Pita Chips will add some calories and fat to the meal but complement the dish well and are less fattening than some alternatives. Stacey's Parm., Garlic Pita Chips are delicious at 140 calories, 5g of fat, 19g carbs, 4g of protien and 2g of fiber. Without the Fiber Supplent, reduce each serving by 25 calories, 6g of carbs and 5g of fiber. Enjoy!
