Healthy Sugar Cookies

1 and 1/3 cups of flour3/4 teaspoon baking powder1/4 teaspoon salt1/2 cup (1 stick) butter, softened1 cup sugar1 large egg1 teaspoon vanilla extract
1. Preheat over to 350F. Line 3 cookie sheets with parchment paper
2. In small bowl, combine flour, baking powder, and salt
3. In a large bowl, beat butter and sugar in mixer at medium speed until light and fluffy. Beat in egg and vanilla until well mixed.
4. Slowly add the flour mixture at a low speed until well combined.
5. Drop dough with a small melon baller (a bit smaller than a ping-pong ball) onto the cookie sheets, 12 cookies per sheet.
6. Bake for about 8-10 minutes, or until edges are browned.
Serving Size: Makes 42 cookies, with a little dough left over
