Quinoa and Ground Turkey Stuffed Peppers

Ingredients
1 Cup of Quinoa2 Cups of Chicken Stock6 Bell Peppers1 Tbs of olive oil1 lb ground turkey14oz diced tomatoes6oz tomato paste1/2 Vidalia onion4 garlic cloves.25 cup Worcestershire sauceGrated Parmesan to taste
Directions
350 degree oven
Cook quinoa in stock for 15- 17 minutes.
Heat oil and saute garlic, onions, and chopped pepper tops.
Add turkey and worcestershire sauce and brown.
Add tomatoes and paste until liquid is absorbed.
Add cooked quinoa to meat mixture and stir.
Fill each pepper and bake for 30 minutes.

Serving Size: Makes 6 stuffed peppers
