Golden Vegetable Egg Bake

Ingredients
WHAT YOU NEED:1 Tbsp. Olive oil1 each zucchini and yellow squash, cut lengthwise in half, slice crosswise1 red pepper, chopped1 onion, sliced1 cup sliced mushroom1/2 cup shredded carrots1/2 tsp. garlic powder1/2 tsp. ground black pepper30 Nabisco Whole Grain Premium Saltine Cracker, coarsely broken6 eggs1 cup milk1/3 KRAFT Grated Parmesan Cheese, divided
Directions
HEAT oil in large skillet on medium-high heat. Add vegetables; cook and stir 5 min, Stir in seasonings. Remove from heat.
LAYER crackers and vegetable mixture in 2-qt casserole sprayed with cooking spray. Whisk eggs and milk until blended. Stir in 1/4 cup cheese; pour over vegetable mixture. Refrigerate several hours.
HEAT oven to 325 degrees Fahrenheit. Bake casserole, uncover, 45 to 50 min. or until knife inserted in center comes out clean. Top with remaining cheese.
