Improvised Mexican Pizza

Ingredients
2 small la tortilla factory low carb tortillas, whole wheat1 sonoma jacks light pepperjack cheese wedge1 laughing cow light queso fresco and chipotle cheese wedge2 tbsp fresh pico de galloa few dashes taco seasoning **note: cheeses can be replaced with other low fat spreadable flavors, this blend was just particularly flavorful.
Directions
Preheat skillet to medium-high and spray with nonstick spray.
On a plate spread one tortilla with pepperjack wedge and other tortilla with queso fresco. Sprinkle pico de gallo and taco seasoning over one of the tortillas and place other on top, cheese-side down. Place quesadilla in skillet and cook for about 1 1/2 minutes per side, or until crispy and brown. Cut into 6 wedges and serve!
