Ingredients
1-2 tbsp water or low-sodium broth1/2 cup diced onion or green garlic or leeksGarlic, 3 clove (remove)1/4 cup diced celery2 tablespoons minced fresh herbs (basil or parsley)1/4 teaspoon dried sage1 teaspoon dried basil1 teaspoon dried oregano1.5 cups cooked lentils (about 0.75 cup dry) (remove)1/4 cup cooked rice, ideally brown*100% Natural Tomato Paste, 3 tbsp (remove)2 tablespoons vital wheat gluten flour (remove)2 tablespoons nutritional yeast2 tablespoons no salt seasoning like Mrs Dash or Dr. Fuhrman's MatoZestGround black pepper to taste
Directions
Preheat oven to 350. In saute pan, heat 1 tablespoon water or broth, and saute the onion and garlic for 5 mins. Add the celery and fresh and dried herbs. Saute for another 5 mins, adding more water as needed to prevent sticking.

In a large bowl, combine the sauteed vegetables with all remaining ingredients and mix well. Mash lightly with a potato masher. With wet hands, form 2 tablespoons of the mixture into a smooth ball. Repeat for each. Place balls on very lightly oiled baking sheet and bake for 30 mins. Serve with low or no salt marinara sauce.

Serving Size: Makes 18 balls (3 servings at 6 balls each)
