Chocolate Cake with Buttermilk and Coffee

Ingredients
1 3/4 cup all-purpose flour2/3 cup white sugar2/3 cup splenda3/4 cup unsweetened cocoa powder2 tsp baking soda1 tsp baking powder1 tsp salt2 eggs1 cup strong brewed coffee1 1/4 cups buttermilk (I made my own by using 1 cup and 3 tbsp of skim milk and adding 1.5 tbsp of white vinegar and letting it sit for 10 minutes, nutrition calculated using 1 1/4 cups skim milk)1/4 cup unsweetened applesauce1 tsp vanilla extract
Directions
Preheat oven to 350 degrees
Combine dry ingredients, make a well in the center
Add wet ingredients and mix
The batter will be thin
Pour into muffin tins with liners or sprayed with nonstick cooking spray
Bake for 15-20 minutes for cupcakes
