Chicken barley soup

Ingredients
1 pound boneless chicken breast, cut into small cubes1 1/2 cups thinly sliced carrot1 1/2 cups thinly sliced celery 1 1/2 cup chopped onion 1 (8-ounce) package presliced mushrooms5 cups fat free, less sodium chicken broth1 bay leaf2/3 cup uncooked pearl barleyblack pepper to tasteCooking spray
Directions
Heat a pot over medium-high heat. Coat pot with cooking spray. Add carrot, celery, onion, and mushrooms to pan; cook 6 minutes or until liquid almost evaporates.

Add chicken; fat free, less sodium chicken broth, black pepper and bay leaf. Bring to a simmer over medium-high heat.

Cover, reduce heat, and simmer 1 1/2 hours, stirring occasionally.

Stir in pearl barley; cover and simmer 30 minutes or until pearl barley is tender. Discard bay leaf.
