228.4 Calories per triangle . Saute onion, green onion and garlic clove in 1 tbsp of olive oil. Defrost spinach and drain out excess water. In separate bowl mix 1 egg, 1/4 cup of ricotta cheese, 1/2 cup of feta cheese crumbled. Saute onions until clear, add spinach and parsley for approximately 2 minutes just to heat through. Add spinach mixture to cheese and egg mixture and mix well. Let cool to room temperature. Lay a piece of parchment paper on the counter and lay out 3 sheets of phyllo dough folded in half. You will need 6 tbps of olive oil in a separate bowl. Brush one side with olive oil - doing each side separately - make sure each layer is lightly brushed with olive oil. Cut the dough in to equal widths and spoon mixture into each and wrap diagonally back and forth to make a triangle.
Cook and 350 for approximately 35-40 minutes. Phyllo dough will be slightly brown.
