almond and orange cake

Ingredients
200grams carrots, peeled4 large eggs, seperated1 tsp vanilla1 orange zested150g caster sugar1 tbsp orange juice150 g ground almonds1/4 tsp baking soda
Directions
preheat oven to 160C
cook carrots until tender cool slightly then blend to a puree with the orange juice
whisk the egg yolks in a bowl with the vanilla and orange zest gradually adding the sugar whisking until pale and thick
fold in the carrot puree and ground almonds
whisk the egg white in a seperate bowl until stiff
fold egg whites into the carrot mix
bake for one hour until springy
cool in the tin for ten minutes, then cool completely on a wire rack
