Banana Bran Oatmeal Muffins

Ingredients
1 cup rolled oats1 cup all-bran cereal1 cup skim milk1 cup whole wheat flour1/2 tsp Stevia OR 1/2 cup sugar 1 tsp baking powder1 tsp baking soda1 tsp salt1/2 tsp cinnamon1/3 cup canola oil2 eggs2 tsp vanilla2 cups mashed bananas (4 to 5 medium)
Directions
Makes 12 large muffins

Combine oats, bran cereal and milk - set aside.

Mix flour, salt, baking powder, baking soda, stevia, cinnamon in a large bowl.

To soaked mixture, add canola oil, eggs, vanilla and bananas.

Add wet mixture to dry ingredients, stir only until flour is moistened.

Fill greased muffin tins.

Bake at 375 for 20 minutes.

    Just made these this morning. The only thing I did different was brown sugar instead of white sugar and low fat buttermilk instead of milk. They were delicious. Best bran or oat muffins yet. Moist and very flavorful. Not at all like a traditional bran muffin. Will make these again and again - 4/6/14

    Just finished a batch of these, I used applesauce instead of oil too, brown instead of white sugar, spelt oats and added a couple handfuls of chocolate chips. I got 12 muffins and 24 mini muffins. Very moist and delicious! - 4/26/11

    Just made these- very good. I used 1/4c fat free sour cream and 3/4c milk and aso added 1/2c mini chocolate chips. I got 21 good sized muffins from this recipe- there was no way I could fit the batter into 12 muffin cups! (: - 6/25/10
