Directions
cut up potatoes season with salt and pepper drizzle with oil and place on jelly roll pan single layer sprayed with cooking spray and cook in oven 400 degrees 30-40 minutes or until done remove from oven

while potatoes are cooking cook up 2 slices bacon until crisp remove from pan set aside remove all oil from pan except for 1 tsp add chopped onion and cook until carmelized. add garlic and cook 30 seconds more

add onion mixture to cooked potato and bacon in a large bowl

combine mayonnaise mustard vinegar and whisk to combine pour over potatoes and toss
