Moist Chocolate Coconut Cup Cake

Granulated Sugar, 1.5 cup (remove)Coconut Oil, .6 cup (remove)Baking Soda, 1.4 tsp (remove)Salt, 1 tsp (remove)Cocoa, dry powder, unsweetened, .5 cup (remove)Buttermilk, lowfat, 1 cup (remove)Egg, fresh, 2 medium (remove)vanilla 1 1/2 tsp. ( not in ingredient list... couldn't find it on spark people)
Preheat oven to 350 F. Spray 12 muffin tins with pan/ or cooking spray. Combine all dry ingredients. Then pour in liquid ingredients. Mix until combined smooth. Coconut oil will become solid, so you have to break it up with a fork or mixer. Bake 25 minutes, until tooth pick comes clean.
