Garlicky Caesar Dressing (vegan)

1 c silken tofu1/4 c olive oil (any)1/4 c cider vinegarjuice of 1 lemon (2 or 3 T)2 T white miso paste2 T nutritional yeast1 T dijon mustard6 cloves garlica few coarse grinds black pepper
Using a blender or food processor, combine thoroughly. Thin with water or a little more vinegar or lemon juice as desired.
The 10-minute prep time includes finding all the ingredients in the back of your fridge and pantry, and opening packages, in addition to the usual measure-and-mix! :)
You should end up with around 2 cups, i.e. 16-2T side salad-appropriate servings, or 8-1/4c entrée salad portions. These are quite generous, but won't break the bank in terms of fat, calories, or even sodium.
