Geevie's Mexican Casserole

Ingredients
Ground turkey, 1 poundTaco seasoning packageStewed tomatoes, undrained and dicedHominy, canned, drained1/2 cup shredded cheeseJiffy cornbread mix, prepared with 1 egg and 1/3 cup milk as per the instructions on the box
Directions
Brown turkey and prepare with taco seasoning mix as per instructions on the package. Put in casserole dish and mix with undrained tomatoes and drained hominy. Top with cheese. Prepare the Jiffy cornbread mix and spread over the top. Bake at 400 for 25 minutes or until cornbread is golden brown. Serves 8.

    Both of us like this recipe. Differences, ground beef instead of turkey, red kidney beans instead of Hominy, tomatoes with green chiles, Taco seasonings has too much sodium, so I used Ground Red Chiles, Cumin and Garlic. - 2/12/18
